Cilantro Lime Chicken Legs

1Combine olive oil , garlic (minced) , cumin , salt , and pepper in a bowl.olive oil: 2 Tbsp, garlic (minced): 4 cloves, cumin: 1/2 tsp, salt: 1/2 tsp, pepper

2Zest one of the limes .limes: 2

3Add the lime zest and lime juice to the marinade.lime zest: 1 tsp, lime juice: 3 Tbsp

4Pull the leaves from cilantro and chop finely.cilantro: 1/4 bunch

5Add the chopped cilantro to the marinade and stir to combine.cilantro

6Pour the marinade into a zip top bag and add the chicken drumsticks .chicken drumsticks: 6

7Close the bag tightly and massage to mix and coat the chicken pieces in the marinade.

8Refrigerate for ⏱️ 30 minutes , or longer if desired, turning the bag occasionally to redistribute the marinade.

9Preheat the oven to 400 degrees.

10Add the chicken pieces to a casserole dish so they are all in one layer, trying not to overcrowd.

11Pour the rest of the marinade in the bag over the chicken.

12Bake the chicken for ⏱️ 40-45 minutes , basting once or twice throughout.

13Turn the broiler on at the end of the cooking time and broil for ⏱️ 2-4 minutes , or until the desired amount of browning is achieved.

14Use a meat thermometer to make sure the meat has reached 160ºF.

15Garnish the chicken with fresh slices of the remaining lime and the remaining chopped cilantro .lime, cilantro: 1/4 bunch
